The Restaurant is part of a project aimed at supporting the excellence of the territory and it is not by chance that it is characterized by a wine list which is able to enhance the production terroir of each bottle as well as by the careful choice of Km 0 seasonal ingredients.
In fact it is the seasons together with our vegetable garden that create the constantly changing menu.

Extra virgin olive oil, saffron, honey, spelt and original grains pasta are just some of the products supplied by Castello del Trebbio, together with the produce that we collect every day directly from our vegetable garden and the quality raw materials selected from small, trusted farmers and breeders who share our same desire to talk about the excellence of local cuisine paired with the wines from these lands.

They have built other wineries over the years, true agricultural organisms which are able to describe the territory not only through the production of wine: the Casadei estate in Suvereto and Olianas in Sardinia.

Castello del Trebbio, Casadei and Olianas share a sustainable ethic that Anna and Stefano have called Biointegrale®. A philosophy that operates in the agricultural field through the use of biodynamic practices, in the energy field through the use of renewable energy, in the architectural field through the conservative restoration of buildings and, in the social field, through the involvement of local labor realities to create synergies that speak of tradition and lands.
